20-28 Asparagus Spears
4 Strips of Bacon
2 Tbsp Extra Virgin Olive Oil
2 Tsp Everything Bagel Rub
Pre-heat smoker to 225 degrees.
Trim the woody ends off the asparagus, use the break test.
Blanch asparagus in salted boiling water for 2 minutes and shock in water to stop the cooking process.
Season the asparagus with the olive oil and seasoning to evenly coat.
Lay the bacon on a flat surface and place 5-7 pieces of asparagus on each piece.
Spiral wrap the bacon around the asparagus.
Place bundles directly on the smoker 30 to 45 minutes turning halfway through.
Cook until the bacon gets crisp and serve.
