Leftover Smoked Turkey Hash
Turn that leftover turkey into a breakfast delicacy like if you were to conjure up this incredible entrée from a Thanksgiving leftover recipe. The best part is that it is savory, tasty, and simple to make! All you have to do is gather your Thanksgiving leftovers then mix and match ingredients to completion. So those potato fries or sweet potatoes can serve another purpose in this turkey hash recipe rather than going to waste. Maybe you want to make this without it being the day after Thanksgiving, no problem! Check out Barbecue At Home’s very own recipes for smoked turkey.
It’s really a wonderous flavor combination of onions, peppers, sausage, and potato that bring this dish to life with the help of Dickey’s Foo Foo Powder and our Chili Pork Butt Seasoning. Time and time again this Dickey’s Chili Pork Butt Rub doesn’t disappoint as it is widely used in many of our Barbecue at Home pork and poultry recipes. And with the Dickey’s Foo Foo seasoning, there will be many other instances where you can use this all-purpose blend of spices on your sides and fried foods. In fact, these two blends are the same ones used daily at your nearby Dickey’s barbecue pit restaurant!
If you can count to six then there’s no doubt you can prep and cook this turkey hash before you are on your way out the door. This dish is incredibly easy to make and even easier to make disappear. Our favorite part is to top it off with a fried egg and breakfast is served the southern style way. You did not think that your smoked turkey leftovers could turn into the best breakfast hash that you ever had, did you? Well, now you know!

1 Lb Leftover Shredded Turkey
1/4 Cup Unsalted Butter
1/2 Cup Diced Yellow Onion
1/2 Cup Diced Red Bell Pepper
1/2 Cup Diced Green Bell Pepper
1/2 Lb Dickey's Original Smoked Sausage
1 Tbsp Dickey's Foo Foo Powder
2 Cups Leftover Diced Cooked Potatoes
1 Tsp Dickey's Chili Pork Butt Rub
2 Tsp Chopped Curly Parsley
As Needed Eggs cooked to liking
Heat 1/2 the butter in a large pan over medium high heat and add cut sausage. Cook the sausage to render fat and lightly brown.
Once sausage is browned, add onions and peppers to the pan and sauté over a medium high heat to blister the edges and cook through.
Remove all ingredients from pan and set aside in a large bowl or dish.
Add the remaining butter back to the pan and add potatoes. Brown the potatoes tossing every 1 minute. Once potatoes are browned on all surfaces, return the sausage and pepper mixture to the pan with the potatoes.
Season the vegetables with the foo foo spice and chili pork rub. Toss well. Add chopped parsley and remove from heat.
Fry eggs to desired doneness and serve over the hash.
