What a great way to get your daily vitamins and potassium! Dickey’s Salted Coffee Rub sprinkled on a banana starts this treat that includes butter, ice cream, whipped cream, pecans, and a touch of bourbon. Guests will wonder, “Is it a cocktail or a dessert?” It’s both!
Ingredients

2 Bananas

1 Tbsp Dickey’s Salted Coffee Rub

2 Tbsp Salted Butter

⅓ Cup Brown Sugar
-
2 Tbsp Bourbon (Non-Alcoholic - sub with 2 Tsp Vanilla)

¼ Cup Half and Half
-
4-8 Scoops Vanilla Ice Cream
-
¼ Cup Chopped Pecans

As Needed Whipped Cream
Directions
Peel and slice ripe bananas on a bias into 1/2″ slices. Evenly sprinkle Dickey’s Salted Coffee Rub on both sides of the bananas.
Melt butter in a saute pan over medium heat, do not brown. Add banana slices and saute for 30 seconds on one side and then flip.
Add brown sugar and melt while moving pan so the sugar does not burn, 1 minute.
Remove from heat and add bourbon, allow alcohol to evaporate before placing back over the heat. This will reduce the risk of flames.
Add half and half and bring to a simmer, brown sugar should dissolve and become a caramel sauce. Remove from heat and set aside.
In a mason jar, place two banana slices with a little sauce, top with scooped ice-cream. Evenly top ice-cream with remaining bananas and sauce from pan.
Top with whipped cream, chopped pecans and a little Dickey’s Salted Coffee Rub.
