Smoking brisket flat

The brisket flat is easy to smoke and perfect for cookouts with friends and family.
So how long does it take to smoke a brisket flat? This depends on the cook temperature and brisket size, but we recommend smoking a 12lb beef brisket for about 9 hours at 225°F or until internal temperature reaches about 203°F. Give yourself enough time to account for prep time, smoke time and also rest time. A rest time of about 30min to 1hr before slicing is ideal.

Smoking a brisket flat on a pellet grill:

This is one of the easiest methods to cook your brisket! It has the advantage of adding a depth of flavor to make your smoked brisket rich and flavorful. Just add in flavored wood pellets while smoking your meat, and since some briskets have a relatively shorter cook time, mesquite and hickory wood pellets would be your top choice for a deeper smoke flavor.
Preheat your pellet grill to 250°F for about 15 minutes. Place the brisket on the grill and cook until it reaches an internal temperature of 198°-203°F. As always, remember to give adequate rest time before slicing!
