3 Lb Red Skin Potato

1/2 Cup Unsalted Butter

1/2 Cub Half & Half

1/2 Cup Sour Cream

2 Tbsp Dickey's Foo Foo Powder
Directions
Preheat smoker to 275°. Place potatoes in a pan large enough to have a single layer and into the smoker.
In a small sauce pan heat butter, half and half, Dickey’s Foo Foo Powder just until steaming and butter is melted. Let sour cream stand to come to room temperature.
Once potatoes are knife tender, approx. 1 hour, place in mixing bowl. Slowly add milk butter mixture using a hand mixer to combine. You may also use a hand held potato masher. Combine to desired consistency.
Once consistency is reached use a rubber spatula to fold in sour cream.
